Hi, I'm RJ. I got my Associates degree from the Iowa Culinary Institute in 2009 and went on to receive a Bachelor's degree in Culinary Science from Iowa State University in 2015. I have been working in kitchens and food labs since my Associates and have gained many different skills and a lot of knowledge. Have you ever wanted to be the best cook in your circle? It's actually not that hard! My experience has taught me that cooking really only boils down to a few simple rules. Everything after that is whatever you can imagine!
People who know how to cook are becoming more and more rare as restaurants and simple heat-and-eat food companies grow. This is starting to turn around though as folks become more cognizant of what they are eating. Whether the reason is because they're trying to be healthier, to reduce their monthly food budget, or even just to enjoy a meal prepared by their own hand there is a renewed interest in cooking. I have worked for the past several years as a manager and supervisor training others to cook healthy, delicious food and I have the skills and knowledge to help you realize your own goals.
Beyond my degrees I have 10 years of experience working with food. 4 of those years have been in a management/trainer position. In those years I have cooked many different types and styles of food: classic French, Mexican, Italian, Indian, Thai, and more. I am also well versed in food restrictions and allergies and how to get around them for a tasty, nutritious meal. As mentor, I've found that everyone needs to learn in their own style. It's led to my belief that "There's 7 billion ways to open a door" meaning that every person will do even the simplest tasks in their own way, and as long as you get through the doorway there is no right or wrong way to go about it. The most important thing is that the lesson and technique feel natural to you.
