I have taught college-level English full time for four years, and then moved into managing first a writing center, and then academic resources at an art and design university. As a writing tutor, I worked one on one with undergrad and grad students on writing assignments and professional documents (resumes and cover letters, scholarship essays, etc.). In addition to this, I am a published roleplaying game designer and editor, and have 5 years corporate communications experience working with clients including IBM, Walmart, Home Depot, and Bank of America.
With the arrival of AI, the idea of writing as just the final product minimizes the worth of the process. Anyone who has kept a blog or a diary can tell you that the act of writing helps you to think things through. You can't edit a blank page, and you can't refine a thought that hasn't crystalized into words yet.
