I have a BS and MS degree in Nutrition and also have my Registered Dietitian credential, as well as being a licensed dietitian in my state. I also have a PhD from Texas Tech University with a PhD in Family and Consumer Sciences Education. My dissertation and subsequent research has been regarding food insecurity, food pantries and access to healthy food.
I have been teaching at the collegiate level for over 14 years, from the Associate's degree up to the doctoral level, in a variety of nutrition courses, such as community nutrition, medical nutrition therapy, basic nutrition, lifespan nutrition, diabetes, eating disorders, obesity, research, sports, geriatrics, food science, and experimental foods.
I enjoy working with students to help them understand concepts related to nutrition. I have worked with students majoring in nutrition, nursing, public health and other allied health fields. I have a style that asks students to participate in the learning process by asking questions, answering questions and being able to show their knowledge by explaining their answers, ensuring that the content is fully mastered. I want to be a cheerleader for the student and help them achieve their educational goals.
