how to find est. uncertainty when given a true mass and an inaccurate mass?

Theoretically, if you know a "true" value of something, but the scale reads differently, the estimated uncertainty of the scale would be the true value minus the scale value, correct?
I am given the true mass of an object, but the scale reads something different. I'm asked to determine the estimate uncertainty of the scale, would this be correct?
