I was certified by the American Culinary Federation as a Chef de Cuisine. The testing for this level was (3) five hour courses in Management, sanitation and nutrition, a 100 question written exam, and a 3 hour practical exam, monitored by 3 certified chefs. I also have 30 years experience in kitchens.
